Healthy Recipes

So... lately I have been really trying to become a more health-conscious person. I've always done my best not to keep junk food in our home (because it will be consumed in 24 hours or less... by me), but I need to do more. I want to start cooking healthier meals. Do you have any healthy (low-fat or low-carb, etc) entree recipes that you like? I would love some ideas!!

Sparkpeople.com is a really good website for weight loss and it helps you keep track of what you eat. I receive daily emails from them that are healthy recipes and exercises. I have made a lot of recipes and they are so good. I just make recipe cards of all the ones that both Jesus and I like. Self.com also has really good recipes. My sister is the healthiest eater I have ever known and she said if she hadnt gotten into Microbiology she would have become a dietitian or personal trainer and she has turned me onto these websites.

I have a couple really good ones that I will post here in the next week. Did you see that avacado salsa recipe? We eat that on baked potatoes and it's really good and pretty filling.

My absolute favorite book is "Eating for Life," by Bill Phillips. Totally worth it and I cook from it a lot. The meals taste great, in fact on Sunday I made these turkey burger meatballs. Typically I am not a meatball person at all so I was skeptical, but I've been making this since hawaii and love it. Anyway so I doubled the batch so Paul could have each meals for a while and freeze some. Well we had friends come over and Paul of course loves to feed everyone, so we put them out and got a ton of compliments, and I had to give out the recipe. ANyway check out the book, it is a good deal too, I got mine for around $25.

This is what I have been craving lately. Salmon. And it's super easy to make. I buy the frozen kind at Costco. If you go to Costco there I imagine they have it. Just put it in a cooking dish with some olive oil, sprinkle some salt, pepper, and basil on top. Cook according to bag instructions. It's delicious. I have also recently started liking barley a lot. It's a lot hartier than rice. I like it's chewy texture. You can find it with your dried beans most likely in the super-market. If you like you can add grilled peppers, roasted pine-nuts (from costco, just put in a pan no grease on med-hi and continually stir till golden brown). Throw into the barley with grilled peppers and some balsamic vinegar. MMMMM. Or, a cheaper way to get salmon is the salmon burgers from costco. Just cook 'em up in your frying pan. No spices needed. They are spiced to perfection as is.

Pesto is really easy to make too and pour over chicken and veggies. Costco frozen veggies or asparagus or whatever. You can find a recipe online, but you just need pine nuts (costco), olive oil, fresh basil, pepper, chicken broth or veggie broth, and some lemon juice (doesn't have to be fresh). Throw it all in a blender or food processor. You can add parmesan cheese too, but I never do and it tastes great!

Or, this sounds good right now too. I made this the other night. Chicken (which you can make in the microwave of boil which are the easiest ways to make chicken I think) cut into strips or diced. Chop up some tomatoes, then make pesto with cilantro instead of basil, and lime juice instead of lemon. Dice up an avocado. Shredded cheese. Then throw all the ingredients into romain lettuce leaves for lettuce wraps. It's delicious!
